Best before again

I saw a consumer show, and learned that the best before date on eggs is calculated on eggs being kept in room temperature. When storing them in the fridge, like most people do, you can keep them a whole month longer. Amazing.

And I must admit I haven't had a bad egg in decades, I mean when opening a raw egg to use for cooking or baking. I guess science has gone forward, even though, as discussed before, the chicken probably has it worse.

I am planning to once splash out on a happy chicken, well I guess at least happy until it was executed, and cook it to see if I find a difference in taste.

Maybe I'll make it a test. Get some friends together, cook a normal chicken and a happy one, and see if we can tell the difference. Yes, that's what I'll do.

before I lived in Switzerland I never kept eggs in the fridge, and at first found it strange that people did. totally conformed now though.
